GREEN Peanut Butter Oatmeal Smoothie






This is a spin on my Peanut Butter Oatmeal Smoothie. I just made it a little green ;)


Ingredients


1 frozen banana
1 Tbsp of peanut butter
1/4 cup of almond milk
handful of ice
1 tsp of coconut oil or coconut butter
1/4 cup of oats
1 packet of stevia
1 cup of chilled unsweetened green tea
2 handfuls of spinach

Method


Place all ingredients in a blender and blend until desired consistency is reached.


NOTE:

To make the chilled green tea, I place two green tea bags in 1 cup of water and let steep overnight in the fridge. Then in the morning, remove the tea bags and you are ready to go!
You may be able to sub 1 cup of water and 2 tsp of matcha powder for the tea, however, I have not tried it yet so I cannot vouch for the results.

Gluten Free Dairy Free Oil Free Brownies




I bought a bag of quinoa flour a few months ago and have been keeping my eye out for a recipe so that I can try it.
This morning I woke up with a craving for brownies?!?!? And I thought...hmmm...I wonder if I can make quinoa flour brownies?
After hours of looking for a recipe, I finally found one. It took so long as I was being picky about which recipe I used. It had to be vegan, easy, and not require me to leave my house for any of the ingredients. ;)
I was very pleased with the brownies. They are very fudge-y not cake-like, which is exactly how I like my brownies! The bonus is they are full of healthy ingredients so no guilt!

Ingredients

  • 1 can of black beans, rinsed and drained
  • 1 cup of quinoa flour (I used Bob's Red Mill)
  • 1 1/4 cup of cocoa powder
  • 1/2 cup of unsweetened applesauce
  • 1/2 cup of pumpkin (NOT pumpkin pie filling)
  • 1/4 cup of water
  • 2 Tbsp of ground flax seeds
  • 1 tsp of vanilla
  • 1 tsp of baking powder
  • 1 3/4 cup of raw sugar
  • 1 cup of dairy-free chocolate chips (optional, but so good)

Method


Preheat oven to 350 and spray a 9x11 pan with cooking spray.

In a food processor or high-powdered blender combine water, beans, applesauce, pumpkin, and vanilla. Process until very smooth.

Next mix the flour, cocoa, flax seeds, baking powder, and sugar in a large bowl.

Add wet ingredients to the dry ingredients and stir to combine. Then mix in the chocolate chips.

Transfer batter to prepared baking pan, evenly spreading out the batter in the pan.

Bake for 25 minutes, being careful not to over bake. Let cool then cut into squares. Enjoy!
