Kale Pesto


Adapted from this recipe


Ingredients (Serves 3-4)

  • 3 1/2 cups of kale, rinsed and chopped
  • 1/2 cup of basil
  • 6 garlic cloves, minced
  • 1/4 cup of cashews
  • 1/4 tsp of black pepper or garlic pepper
  • 1/2 tsp of salt (skip if using salted cashews)
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of water
  • 1/4 cup of non-dairy Parmesan (I made my own using this recipe)

Method

Combine all ingredients in a food processor and process until smooth. Serve over hot pasta.
